3 Ingredient Gluten Free Cookie

Yes, you read that right.  3 simple ingredients for one of the yummiest cookies you have tasted.  Ready for this – you won’t even need a pen.  1 cup peanut butter, 1 cup sugar and 1 egg.  Whip those babies together and you have cookies!  Well of course you need to bake them.  Bake at 350 for about 8 minutes.

I guess I cheated and added a 4th ingredient with the chocolate chips.  I had these for the first time at a friend’s house and she had a Hershey Kiss on top and they were yummy.  I had no Kiss so I subbed in a chocolate chip and these were good too.  Pretty much anything sweet and yummy on top would do but really they were tasty even with nuthin’ on top.

I used Trader Joes’s Organic Crunchy Peanut Butter with Sea Salt and also the Trader Joe’s Organic sugar.  Sometimes I find that the organic stuff doesn’t bake up as well but that wasn’t the case with this one.  For the next batch I am going to try creamy peanut butter and see how that goes.  This is going to be my new favorite dessert to whip together when a last minute dinner party comes together.
